Cast Iron Skillet Cornbread


  • 2 cups cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 eggs, beaten
  • 2 cups buttermilk
  • 2 tablespoons vegetable oil

1 Combine cornmeal, baking powder, soda and salt in a large bowl, add eggs, buttermilk, and oil, stirring just until dry ingredients are moistened. 2 Place in a well greased 10 inch cast iron skillet in a 450F oven for 25 minutes or until lightly browned.
