Catfish Baked in Foil


  • 1 cup couscous (preferably whole wheat)
  • 2 tablespoons extra-virgin olive oil
  • ¾ teaspoon smoked paprika
  • Kosher salt and freshly ground pepper
  • 4 6-ounce skinless catfish fillets
  • 2 lemons (1 thinly sliced, 1 juiced)
  • 1/3 cup roughly chopped fresh parsley or mint

    • 1 medium red onion, thinly sliced
    • 1 cup cherry tomatoes, halved
    • 2 cloves garlic, finely chopped
