Catfish Saint James

Ingredients

  • 4 (8 ounce) fillets catfish
  • 1 (12 fluid ounce) can evaporated milk
  • 1 ½ cups all-purpose flour
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons baking powder
  • 1 tablespoon garlic powder
  • + 4 more ingredients
    • 1 tablespoon ground dry mustard
    • 1 tablespoon onion powder
    • salt and pepper to taste
    • 1 cup butter, melted

1. Wash and dry catfish filets. Place filets in a shallow dish and pour milk over them. Cover and refrigerate for 6 hours or overnight. 2. Preheat oven to 400 degrees F (200 degrees C).
