Ingredients

  • 2 ½ tablespoons extra-virgin olive oil
  • 1 garlic clove
  • ½ medium head cauliflower (3 cups)
  • ¼ cup flat-leaf parsley
  • ½ cup crumbled feta
  • 5 large eggs

Beat eggs with 1/4 teaspoon salt. Heat oil in a 10-inch heavy nonstick skillet over medium-high heat until it shimmers, then sauté cauliflower until browned and tender, 5 to 9 minutes.
