Cauliflower and Potato Sabzi with Spices

Ingredients

  • 1 head cauliflower (about 1 1/2 pounds)
  • 2 teaspoons cumin seeds
  • 2 baking potatoes, peeled, halved lengthwise, and sliced (about 1 3/4 pounds)
  • ½ teaspoon ground red pepper
  • 4 garlic cloves, minced
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup water
  • + 6 more ingredients
    • 2 tablespoons vegetable oil, divided
    • 1 teaspoon Garam Masala
    • 3 tablespoons chopped peeled fresh ginger
    • 1/3 cup tomato puree
    • ¾ teaspoon ground turmeric
    • 1 ½ teaspoons salt

Separate cauliflower into florets to measure 4 cups, reserving stems. Cut stems into thin slices to measure 1 cup. Heat 1 1/2 tablespoons oil in a Dutch oven over medium-high heat.
