Ingredients

  • 1 2-qt soufflé dish
  • 8 large egg whites
  • 4 ½ tablespoons all-purpose flour
  • 6 large egg yolks
  • White pepper
  • 1 ½ cups whole milk
  • 3 tablespoons finely grated Parmigiano-Reggiano
  • + 4 more ingredients
    • 4 tablespoons unsalted butter
    • 8 tablespoons salted butter
    • 1 ¼ cups cauliflower florets
    • ¼ cup flat-leaf parsley

Preheat oven to 400°F with rack in middle. Generously butter soufflé dish, then sprinkle with cheese, knocking out excess.
