Cheddar & Corn Chowder

Ingredients

  • 2 cups diced ham
  • 1 package Knorr Rice Sides™ - Cheddar Broccoli
  • 1 can (8-3/4 oz.) cream-style corn, undrained
  • 2 cups milk
  • 2 tablespoons chopped fresh cilantro
  • ¼ teaspoon salt
  • Crumbled queso fresco cheese
  • + 3 more ingredients
    • 2 cups water
    • 1 medium red bell pepper, chopped
    • 1 can (4 oz.) chopped green chilies, undrained (optional)

Bring all ingredients except cilantro and queso fresco to a boil in a large saucepot, stirring occasionally. Reduce heat and simmer about 10 minutes or until rice is tender, stirring occasionally. Serve garnished with cilantro and crumbled queso fresco.
