  • 1 ½ cups coarsely shredded Cheddar (about 6 oz.)
  • ¾ cup buttermilk
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 4 teaspoons baking powder
  • 1 ½ cups all-purpose flour

Preheat oven to 450°F. Whisk together flour, baking powder, baking soda and salt in a mixing bowl. With a pastry blender or 2 knives, cut in cheese and butter until pieces resemble small peas.
