  • 7 oz. (14 Tbs.) unsalted butter, cold and cut into chunks
  • 8 oz. (2 cups) unbleached all-purpose flour
  • 1/8 tsp. baking powder
  • 1 egg yolk mixed with a little water and paprika as a glaze
  • ¼ tsp. cayenne
  • 1 tsp. salt
  • 5 oz. sharp cheese, shredded (I use a mix of sharp cheddar and parmesan)
  • + 2 more ingredients
    • 1 large egg
    • ½ cup finely chopped pecans (or walnuts)

Put the flour, baking powder, salt, and cayenne in a food processor. Whiz for a second to blend. Dump in the butter and whiz again until the butter is in small (pea-size) pieces.
