  • 3 large eggs, separated
  • 1/8 teaspoon ground red pepper
  • ½ cup soft breadcrumbs
  • 1 cup milk
  • 2 teaspoons butter or margarine
  • ¼ teaspoon salt
  • 1 cup (4 ounces) shredded Cheddar cheese

Cook first 3 ingredients in a large saucepan over medium-high heat, stirring constantly, until cheese melts. Remove from heat. Beat egg yolks until thick and pale.
