  • 2 cups grated hot pepper Monterey Jack cheese
  • 1 cup mango
  • 8 5- to 6-inch-diameter corn tortillas
  • ¼ cup fresh cilantro
  • 1 cup pineapple
  • 3 tablespoons vegetable oil
  • 1 cup golden hominy
  • + 3 more ingredients
    • ½ cup red onion
    • 1 jalapeño chili
    • ¾ cup crumbled feta cheese

Stir first 5 ingredients in medium bowl to blend. Season salsa with salt and pepper. Cook tortillas over gas flame until blackened in spots, about 30 seconds per side. Transfer to work surface.
