Cherry Tomato, Sausage, Arugula, Ricotta Frittata


  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil, plus extra-virgin olive oil for garnish
  • 1 tablespoon aged balsamic vinegar
  • 2 teaspoons chopped fresh thyme leaves
  • Salt and freshly ground black pepper
  • 1 tablespoon canola oil
  • 12 ounces mild or hot (or combination of both) Italian sweet sausage

    • 1 cup grated provolone cheese
    • ¼ cup grated Romano cheese
    • 2 ounces baby arugula
    • ¼ cup chopped fresh parsley, plus whole leaves for garnish
