Ingredients

  • 4 tablespoons Grand Marnier
  • 1 1/3 cups heavy cream
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
  • 1 instant-read thermometer
  • 1 ½ cups dark brown sugar
  • 6 large egg yolks

    • 1 cup roasted, shelled, and skinned chestnuts
    • 1 fresh orange zest
    • 1 teaspoon vanilla
    • 3 cups whole milk
    • 1 cup heavy cream
    • 1 ice-cream maker
    • 6 ounces fine-quality bittersweet chocolate (not unsweetened)
