Chile-Lime Pineapple with Cardamom-Lime Ice Cream

Ingredients

  • ¼ teaspoon cream of tartar
  • 2 large pasteurized egg whites
  • 1 large pineapple, peeled, cored, and cut into 8 (1/2-inch) slices
  • ¼ teaspoon ground cardamom
  • 1 cup sugar
  • ½ cup water
  • ½ cup water
  • + 11 more ingredients
    • 1 hot red or green chile, seeded and minced
    • 2 tablespoons (1-inch) julienne-cut lime rind
    • 1/3 cup fresh lime juice (about 3 limes)
    • ½ cup heavy cream
    • 1 teaspoon grated lime rind
    • Ice cream:
    • 1 cup low-fat buttermilk
    • ½ cup sugar
    • Pineapple:
    • 2 cups boiling water, divided
    • ¼ cup fresh lime juice (about 2 limes)

To prepare ice cream, combine first 3 ingredients in a saucepan; bring to a boil. Stir to dissolve sugar; cook 3 minutes.
