Chilled Sugar Snap Pea Soup
Ingredients
- 2 tablespoons butter
- 1 cup chopped onion (about 1 medium onion)
- 1 cup half-and-half
- ½ teaspoon kosher salt
- 2 tablespoons chopped fresh chives (optional)
- 2 teaspoons sugar
- 1 ½ pounds sugar snap peas, washed and cut crosswise into -inch pieces
Melt the butter in a large skillet over medium heat. Add the onion and cook 5 minutes. Add the sugar snap peas and cook, stirring occasionally, until bright green and crisp-tender, about 5 minutes.
