Chimichurri Seitan Skewers


  • 1 ½ cup packed flat-leaf parsley leaves
  • ¼ cup red wine vinegar
  • 6 cloves garlic, peeled and minced
  • ¾ teaspoon red pepper flakes
  • 1 tablespoon diced red onion
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • + 2 more ingredients
    • ½ cup extra virgin olive oil
    • 2 (8 ounce) packages seitan, drained, large pieces torn in half

Place parsley, vinegar, garlic, red pepper flakes, red onion, lemon juice and salt in a food processor and pulse until thoroughly combined. With motor running, slowly add oil.
