Chimichurri Seitan Skewers
Ingredients
- 1 ½ cup packed flat-leaf parsley leaves
- ¼ cup red wine vinegar
- 6 cloves garlic, peeled and minced
- ¾ teaspoon red pepper flakes
- 1 tablespoon diced red onion
- 1 teaspoon fresh lemon juice
- ½ teaspoon salt

- ½ cup extra virgin olive oil
- 2 (8 ounce) packages seitan, drained, large pieces torn in half
Place parsley, vinegar, garlic, red pepper flakes, red onion, lemon juice and salt in a food processor and pulse until thoroughly combined. With motor running, slowly add oil.
