Chipotle-Maple Sweet Potatoes

Ingredients

  • 1 pound coarsely chopped peeled sweet potato
  • 1 ½ teaspoons adobo sauce
  • ½ drained canned chipotle chile in adobo sauce, minced
  • 2 tablespoons maple syrup
  • 1/8 teaspoon black pepper
  • 2 tablespoons fat-free milk
  • 1/8 teaspoon black pepper
  • + 9 more ingredients
    • 2 tablespoons fat-free milk
    • 1 tablespoon butter
    • ¼ teaspoon salt
    • ½ drained canned chipotle chile in adobo sauce, minced
    • 1 pound coarsely chopped peeled sweet potato
    • 2 tablespoons maple syrup
    • ¼ teaspoon salt
    • 1 tablespoon butter
    • 1 ½ teaspoons adobo sauce

Place potato in a saucepan, and cover with water; bring to a boil. Reduce heat, and simmer 15 minutes or until tender; drain. Return potatoes to pan. Add remaining ingredients; beat with a mixer at medium speed until smooth.
