Chive & Gruyère Omelet

Ingredients

  • ½ tsp. olive oil
  • 4 grinds freshly ground black pepper
  • 1 thin slice Canadian bacon, cut into 1x¼-inch strips
  • 2 pinches kosher salt

  • 1 Tbs. water
  • 2 large or extra-large eggs
  • + 4 more ingredients
    • 1 tsp. unsalted butter
    • 3 Tbs. finely grated Gruyère
    • 1 tsp. olive oil
    • 1 Tbs. plus 1 tsp. snipped fresh chives

In a small sauté pan, heat the olive oil over medium heat. Add the Canadian bacon and cook, stirring, until browned; set aside.
