Chive & Gruyère Omelet

Ingredients
- 2 pinches kosher salt
- 2 large or extra-large eggs
- 1 tsp. unsalted butter
- 1 Tbs. plus 1 tsp. snipped fresh chives
- ½ tsp. olive oil
- 4 grinds freshly ground black pepper
- 1 thin slice Canadian bacon, cut into 1x¼-inch strips
- + 4 more ingredients

- 3 Tbs. finely grated Gruyère
- 1 Tbs. water
- 1 tsp. olive oil
In a small sauté pan, heat the olive oil over medium heat. Add the Canadian bacon and cook, stirring, until browned; set aside.
