  • 6 tablespoons crushed amaretti cookies (Italian macaroons)
  • ¼ teaspoon almond extract
  • 3 tablespoons amaretto
  • ½ teaspoon vanilla extract
  • 1 cup whipping cream
  • 6 ounces semisweet chocolate
  • 5 large egg whites
  • + 3 more ingredients
    • 3 tablespoons sugar
    • 3 large egg yolks
    • Powdered sugar

Position rack in center of oven and preheat to 400°F. Butter six 3/4-cup soufflé dishes; dust with sugar. Place on baking sheet.
