Ingredients

  • fans made from white and dark chocolate
  • cocoa powder
  • icing sugar
  • 55 g dark chocolate, melted
  • 150 g butter, softened
  • 2 egg yolks
  • 4 tbsp water

    • 85 g caster sugar
    • 300 ml double cream, lightly whipped
    • 250 g canned chestnut purée
    • 25 g butter, melted
    • 6 tbsp cocoa powder
    • 60 g plain flour
    • 125 g caster sugar
    • 4 eggs

1. Preheat the oven to 180C/gas 4. Line a 23 x 33cm Swiss roll tin with greaseproof paper.2.
