Ingredients

  • 5 ounces bittersweet (not unsweetened) or semisweet chocolate
  • ½ cup water
  • 2 tablespoons sugar
  • ¼ cup whole milk
  • 2 tablespoons unsweetened cocoa powder
  • 4 large egg yolks
  • 2 cups whole milk
  • + 7 more ingredients
    • 4 large eggs
    • ¼ teaspoon salt
    • 10 ounces bittersweet (not unsweetened) or semisweet chocolate
    • ¼ cup unsalted butter
    • 14 tablespoons all purpose flour
    • 1/3 cup all purpose flour
    • 2/3 cup sugar

Whisk sugar and flour in heavy medium saucepan to blend. Gradually whisk in milk, then egg yolks. Whisking constantly, cook over medium heat until cream thickens and boils, about 10 minutes.
