Chocolate Earl-Grey Shortbread Coins

Ingredients

  • ¼ cup granulated sugar
  • 1 tablespoon earl grey tea leaves
  • ½ cup cold unsalted butter (cut into ½ inch pieces)
  • ¾ cup unbleached all-purpose flour
  • 3 tablespoons unsweetened cocoa powder (dutch process or natural)
  • 1/8 teaspoon salt
  • 3 tablespoons sanding or decorator's sugar (optional)

1 Place the granulated sugar and tea leaves in the bowl of the food processor and grind for 1 miute, or untl the leaves are very finely chopped.
