Ingredients

  • 10 fresh raspberries
  • 2 tablespoons (1 ounce; 28 grams) sour cream
  • 2 ½ tablespoons (1 ounce; 30 grams) Grand Marnier (optional)
  • 1 2/3 cup (14 ounces; 400 grams) heavy cream
  • Scant ½ cup (3.7 ounces; 105 grams) granulated sugar
  • Scant ¼ cup (2 ounces; 60 grams) water
  • 5 large egg yolks
  • + 4 more ingredients
    • 1 large egg
    • 8.9 ounces (250 grams) bittersweet chocolate, chopped
    • 16 ounces (454 grams) bittersweet chocolate, tempered
    • 5 large fresh strawberries
