Chocolate-Sour Cream Frosting

  • 1/3 cup sour cream (not low-fat)
  • 2 oz. unsweetened chocolate, chopped
  • Milk, if necessary
  • ¾ tsp. pure vanilla extract
  • 1 Tbs. unsalted butter
  • 6 oz. confectioners’ sugar (1-½ cups, spooned and leveled)
  • Pinch salt

Put the chocolate and butter in the top of a double boiler or in a metal bowl set over a small saucepan of barely simmering water. Stir occasionally until the chocolate mixture is melted and smooth.
