Chocolate traybake with feather icing


  • 50g/1¾oz white chocolate
  • 200g/7oz milk chocolate, finely chopped or grated
  • 100ml/3½fl oz double cream
  • 3-4 tbsp warmed, sieved apricot jam
  • 1 tsp baking powder
  • 175g/6oz self-raising flour
  • 125ml/4fl oz milk
  • + 5 more ingredients
    • 3 large free-range eggs
    • 275g/9¾oz caster sugar
    • 100g/3½oz baking spread or soft butter
    • 6 tbsp boiling water
    • 50g/1¾oz cocoa powder
