Ingredients

  • 1 large garlic clove, minced
  • ¼ teaspoon cinnamon
  • ½ teaspoon ground cumin
  • 1 ½ pounds ground lamb
  • Kosher salt and freshly ground black pepper
  • 4 slices of peasant bread
  • 3 tablespoons extra-virgin olive oil, plus more for brushing

    • Marjoram leaves, for garnish
    • 1 small red onion, finely diced
    • 4 ounces fresh goat cheese, cut into 4 pieces
