Chopped Salad

Ingredients

• ½ cup brine-cured black olives, pitted and quartered
• 1 cup fresh flat-leaf parsley leaves
• 1 small red onion, finely chopped
• 1 yellow bell pepper, diced
• 2 medium tomatoes, diced
• 1 English cucumber, diced
• 3 cups chopped romaine (1 medium head)
• + 6 more ingredients
• • ¹/₃ cup olive oil
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • 1 small garlic clove, minced
  • 1 ½ teaspoons sugar
  • 2 tablespoons fresh lemon juice

1. Whisk together lemon juice, sugar, garlic, salt, and pepper in a large bowl, then add oil in a stream, whisking until combined. 2. Toss remaining ingredients with dressing.
