  • 1 cup grated extra-sharp white cheddar cheese
  • 4 tablespoons fresh cilantro
  • Sour cream
  • 4 large eggs
  • 4 green onions
  • Hot sauce or salsa
  • 7 ounces fresh chorizo sausage
