Ingredients

• 1 teaspoon cold water, for glaze
• 1 egg, beaten with
• 4 eggs, beaten
• 1 ¼ cups all-purpose flour
• ¼ teaspoon salt
• 2 teaspoons superfine sugar (optional)
• ½ cup butter, cut into small pieces
