Ingredients

  • 1 teaspoon kosher salt
  • 1 (3-inch) cinnamon stick
  • ½ teaspoon vanilla extract
  • 1 cup dried tart cherries
  • ½ teaspoon almond extract
  • 1 teaspoon ground cinnamon
  • 3 cups 2% reduced-fat milk

    • 1 teaspoon cornstarch
    • ¼ teaspoon almond extract
    • ½ cup sugar
    • 6 cups water
    • 1 tablespoon water
    • 1 ½ cups uncooked jasmine rice
    • Pudding:

    • 1 ½ cups water
    • 1 teaspoon vanilla extract
    • 2 tablespoons sugar

To prepare pudding, combine first 4 ingredients in a large, heavy saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes or until rice is tender. Drain.
