Ingredients

  • 1/3 cup granulated sugar
  • 1 Tbs. demerara or turbinado sugar
  • 1-½ tsp. ground cinnamon
  • 1 cup cold heavy cream
  • 4 oz. (8 Tbs.) cold butter, cut into small pieces
  • 1 recipe Caramelized Plums
  • 1 tsp. pure vanilla extract
  • + 8 more ingredients
    • 1 cup plus 2 Tbs. cold heavy cream; more for brushing
    • 1/8 tsp. ground nutmeg
    • ¾ cup (about 3 oz.) walnuts, toasted and very roughly chopped
    • ½ tsp. table salt
    • 1-½ Tbs. baking powder
    • 12 oz. (2-2/3 cups) unbleached all-purpose flour; more for dusting
    • 3 Tbs. confectioners' sugar
    • ¼ cup cold sour cream

Line a large rimmed baking sheet with parchment.Chill the butter pieces in the freezer for about 15 minutes.
