Citrus Pickled Red Onion and Golden Beet Salad with Green Beans

Ingredients

• 1 pound golden beets
• ½ cup fresh lemon juice
• ¼ teaspoon freshly ground black pepper
• 1 pound green beans, trimmed
• 2 cups thinly sliced red onion (about 2 large)
• ¼ teaspoon salt
• ½ teaspoon grated orange rind

  • 1 tablespoon extravirgin olive oil
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice

Preheat oven to 350°. Leave root and 1-inch stem on beets; scrub with a brush. Place beets in center of a baking sheet lined with aluminum foil. Drizzle with 1 teaspoon oil.
