Ingredients

  • 2 cups arborio rice
  • 1 cup drained chopped clams
  • 4 tablespoons olive oil
  • ¼ pound bacon, slices cut crosswise into thin strips
  • ¼ teaspoon salt, more if needed
  • ¼ teaspoon fresh-ground black pepper
  • 1 onion, chopped
  • + 5 more ingredients
    • 3 cups water, more if needed
    • 1 cup dry white wine
    • 3 cloves garlic, minced
    • 3 cups bottled clam juice
    • 3 tablespoons chopped fresh chives or scallion tops
