Classic Double-Crust Apple Pie

Ingredients

  • ½ cup solid vegetable shortening
  • 3 tablespoons unsalted butter
  • 10 tablespoons unsalted butter
  • ½ teaspoon salt
  • 2 ½ cups all purpose flour
  • large pinch of ground cinnamon
  • 1 tablespoon whole milk
  • + 9 more ingredients
    • 1 ¾ pounds sweet apples, such as Spartan or Golden Delicious
    • 1 teaspoon fresh lemon juice
    • 4 tablespoons water
    • Nonstick vegetable oil spray
    • 1 ¾ pounds tart apples, such as Granny Smith or Pippin
    • 13 tablespoons sugar
    • ½ teaspoon ground cinnamon
    • 1 tablespoon all purpose flour
    • ½ teaspoon vanilla extract

Whisk flour and salt in large bowl to blend. Add butter and shortening and rub in with fingertips until very coarse meal forms.
