  • ½ cup raw medium-grain white rice
  • 1/3 cup sugar
  • 1 vanilla bean, split, or 1-½ tsp. vanilla extract
  • 4 cups whole milk
  • Pinch salt
  • 2 large egg yolks

Dump the milk, rice, salt, and split vanilla bean into a large, heavy saucepan (if you're using vanilla extract, don't add it yet). Bring to a boil over high heat, stirring constantly.
