  • 4 cups sweetened flaked coconut
  • 2 cups self-rising flour (not cake flour)
  • 2 large eggs
  • ½ cup sugar
  • 8 tablespoons unsalted butter

Preheat oven to 350°F. Butter and flour a 9- by 5- by 3-inch loaf pan, knocking out excess flour.
