Coconut Cream Pie with Chocolate Macaroon Crust

- 1 teaspoon gelatin
- 2 cups unsweetened coconut milk
- 1 cup sugar
- 1 teaspoon pure coconut extract
- Pinch of coarse salt
- 3 tablespoons cornstarch
- 3 large egg yolks
