Coconut Cream Pie with Chocolate Macaroon Crust


  • 1 teaspoon gelatin
  • 2 cups unsweetened coconut milk
  • 1 cup sugar
  • 1 teaspoon pure coconut extract
  • Pinch of coarse salt
  • 3 tablespoons cornstarch
  • 3 large egg yolks
