Coconut Cream Puffs

Ingredients

  • ½ teaspoon vanilla extract
  • ¾ cup skim milk
  • 2 teaspoons sugar
  • ¼ teaspoon salt
  • ½ teaspoon coconut extract
  • 2 tablespoons margarine
  • 1 ½ teaspoons margarine

    • ½ teaspoon unflavored gelatin
    • 1 tablespoon water
    • 2 tablespoons powdered sugar
    • 1 cup all-purpose flour
    • 1 large egg
    • 1 large egg yolk
    • Cooking spray
    • Mint sprigs (optional)
    • 3 large egg whites
    • 3 tablespoons cream of coconut
    • 2 tablespoons sugar
    • 1 ½ tablespoons cornstarch
    • 1 cup skim milk
    • ¾ cup frozen reduced-calorie whipped topping, thawed

Preheat oven to 425°. Combine first 3 ingredients; set aside. Combine 1 cup milk and 2 tablespoons margarine in a large saucepan; bring to a boil. Reduce heat to low; add dry ingredients, stirring well until mixture is smooth and pulls away from sides of pan. Remove from heat; let cool 5 minutes....
