Coconut Cream Tarts

Ingredients

  • ¾ cup sugar
  • 1/3 cup all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 1 cup sweetened flaked coconut
  • 1 tablespoon vanilla extract
  • 1 (8-oz.) package frozen tart shells

Whisk together sugar, flour, eggs, and milk in a heavy saucepan. Cook over medium heat, whisking constantly, 10 minutes or until a chilled pudding-like thickness.
