  • ½ cup unsweetened coconut flakes
  • 1 tsp. vanilla extract
  • 6 Tbs. sugar
  • 3 large egg whites

Heat the oven to 300°F. Spread 1/4 cup of the coconut flakes on a baking sheet. Bake until golden, about 5 minutes. Lower oven to 200°.Beat the egg whites until they form soft peaks.
