Ingredients

  • 3 cups sweetened flaked coconut
  • 4 large eggs
  • 16 tablespoons unsalted butter
  • ½ cup peach preserves
  • 1 peach
  • 3 cups whipping cream
  • 2 teaspoons vanilla extract

    • 2 ¾ cups all purpose flour
    • ¾ cup buttermilk
    • ½ teaspoon salt
    • ½ cup sugar

Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Whisk flour, baking powder, and salt in medium bowl to blend.
