Coconut Pie Shells
- ½ cup sweetened shredded coconut
- ½ cup cold unsalted butter, cut into 1/2-in. cubes
- ¼ teaspoon coarse kosher salt
- 3 to 5 tbsp. ice water
- 2 teaspoons sugar
- 1 cup plus 2 tbsp. flour
