Coconut Puff Cupcakes

Ingredients

• Cupcakes:
• ¼ c firmly packed dark brown sugar
• ¾ c granulated sugar
• 1 c plus 2 tablespoons flour
• ¼ t kosher salt
• ¹/₃ c cocoa powder
• 1 ½ t baking soda
• + 10 more ingredients
• • 1 large egg
  • ½ c Real California milk
  • ½ t lemon juice
  • ½ c water
  • 5 T unsalted Real California butter, melted and cooled to room temperature
  • Frosting:
  • 1 ½ stick unsalted Real California butter, at room temperature
  • 1 ¼ c powdered sugar
  • 1 t vanilla extract
  • 2 c shredded coconut
