Coconut-Raisin Rice Pudding

Ingredients

  • ¾ teaspoon ground nutmeg
  • 2 teaspoons vanilla extract
  • 1 cup sugar
  • 3 cups milk
  • 3 eggs
  • ¼ cup butter or margarine, melted
  • ¾ cup flaked coconut
  • + 3 more ingredients
    • ¾ cup raisins
    • 2 ½ cups cooked rice
    • ½ teaspoon salt

1. Place butter in 13-in. x 9-in.x 2-in. baking dish; set aside. In a large bowl, combine the eggs, milk, sugar, vanilla, nutmeg and salt. Stir in the rice and raisins.
