Coffee-Braised Short Ribs with Ancho Chile
Ingredients
- 1 ¼ teaspoons ground cumin
- 2 cups strong coffee (not espresso or dark roast)
- 1 14 1/2-ounce can diced tomatoes in juice
- 1 tablespoon tomato paste
- 1 large red bell pepper
- 1 large onion
- 2 tablespoons olive oil

- 1 large jalapeño
- fresh cilantro
- 6 garlic cloves
- 2 tablespoons dark brown sugar
- 1 ½ tablespoons ancho chile powder
- 2 teaspoons dried oregano
Preheat oven to 300°F. Heat oil in heavy large pot over medium-high heat. Sprinkle short ribs with salt and pepper.
