Coffee-Braised Spoon Lamb

Ingredients

  • Kosher salt and freshly ground black pepper
  • 6 garlic cloves, divided
  • 1 bone-in leg of lamb (about 7 lbs.), trimmed of outside fat
  • 2 shallots, peeled
  • 1 cup dry red wine
  • 1 large onion, quartered
  • 4 large carrots, cut into chunks
  • + 4 more ingredients
    • ¼ cup olive oil
    • ¼ cup chopped flat-leaf parsley
    • 3 cups freshly brewed strong coffee, divided
    • 1 tomato, quartered

1. Preheat oven to 400°. Mince 2 garlic cloves and rub onto lamb, spreading evenly. Generously sprinkle lamb with salt and pepper. Put lamb on a V-shaped rack in a large roasting pan.
