  • 1 tsp. baking soda
  • 5 oz. (10 Tbs.) very soft unsalted butter; more for the pan

  • 2-½ oz. (½ cup plus 1/3 cup) unsweetened natural cocoa powder (not Dutch-processed)
  • 1-½ cups good-quality brewed coffee, cooled to warm
  • 1 tsp. pure vanilla extract

    • 1-2/3 cups granulated sugar
    • 2 large eggs, at room temperature
    • 7-¼ oz. (1-½ cups plus 2 tablespoons) unbleached all-purpose flour; more for the pan
