Coffee Souffle


  • 1 ½ cups brewed coffee
  • ½ cup milk
  • ½ cup white sugar, divided
  • ¼ teaspoon salt, divided
  • 1 envelope (1 tablespoon) unflavored gelatin
  • 3 eggs, separated
  • ½ teaspoon vanilla extract

1. In the top of a double boiler over simmering water, combine coffee, milk, half the sugar, half the salt and gelatin. Stir until solids are dissolved.
