Coffee-Spiced Thai Tofu Skewers


  • 2 pound extra-firm or firm tofu cut into 1-inch cubes
  • Tofu Skewers:
  • 1 teaspoon crushed red chiles
  • 1 tablespoon minced ginger root
  • 3 garlic cloves, minced
  • 2 tablespoon lime juice
  • 1 tablespoon light brown sugar
  • + 6 more ingredients
    • 2 tablespoon ground coffee
    • 1 tablespoon curry powder
    • 2 tablespoon smooth or chunky peanut butter
    • ¼ cup low-sodium soy sauce
    • 1 tablespoon Asian sesame oil
    • Coffee Marinade:

To make marinade: Combine all ingredients and set aside. To make skewers: Thread tofu on wooden skewers and place in a baking dish.
