Coffee-Spiced Thai Tofu Skewers


  • Coffee Marinade:
  • 1 T Asian sesame oil
  • ¼ c low-sodium soy sauce
  • 2 T smooth or chunky peanut butter
  • 1 T curry powder
  • 2 T ground coffee
  • 1 T light brown sugar
  • + 6 more ingredients
    • 2 T lime juice
    • 3 garlic cloves, minced
    • 1 T minced ginger root
    • 1 t crushed red chiles
    • Tofu Skewers:
    • 2 lb extra-firm or firm tofu cut into 1-inch cubes

To make marinade: Combine all ingredients and set aside. To make skewers: Thread tofu on wooden skewers and place in a baking dish. Pour marinade over, cover and refrigerate at least 2 hours or overnight if possible. Turn periodically if skewers are not covered in marinade. When ready to co...
