Cognac-Glazed Dried Apricots with Cinnamon-Spiced Yogurt
Ingredients
- 3 cups plain Greek yogurt or drained plain whole-milk yogurt
- fresh mint
- natural unsalted pistachios
- 1/3 cup Cognac or other brandy
- 18 tablespoons orange juice
- 1 pound dried pitted whole Mediterranean-style apricots
- 2 tablespoons sugar
- + 3 more ingredients

- 1 tablespoon orange peel
- ¾ teaspoon ground cinnamon
Stir yogurt and cinnamon in medium bowl to blend. Cover and chill at least 1 hour and up to 1 day. Cook orange peel in boiling water 5 minutes. Drain and reserve peel.
